This Pot Roast recipe is really easy to make and very versatile. You can serve noodles, spaghetti, macaroni, or rice and any vegetable you like with this one. My favorite is to serve with macaroni, garlic bread, and summer squash.
You will need:
- 3-4 lb chuck roast
- 1 Tbs olive oil
- 1 clove garlic
- 1 small onion, chopped
- 1 can itailian diced tomatoes
- 1 small can tomato sauce
- parmesan cheese
- salt and pepper to taste
Pour olive oil into heavy pot. Brown roast quickly on both sides over med-high heat. Add can of tomatoes, chopped onion, and garlic clove. Reduce heat to low, cover and cook until beef is falling apart. Check liquid level periodically and add a small amount of tomato sauce if needed. Sprinkle with parmesan cheese, salt, and pepper before serving.
Things I have added:
•1 lb fresh green beans and a bit of water about 15 min. before beef is done.
•sliced baby carrots, broken & cooked fettuccine, small can sliced black olives. Add carrots 15 min. before beef is done; pasta and olives 5 min before, to heat
