I got it MEATLOAF. It's quick and easy. Now I know all about the "after taste". Whenever I say "meatloaf for dinner" I always hear that comment from my husband about when he was a kid how he hated meatloaf because of that nasty after tatse! You will be safe with this recipe, no after taste here.
You will need:1 1/2 lb ground beef
1 tsp Adobo seasoning
1/2 cup seasoned bread crumbs
3/4 cup chunky salsa
1 cup shredded colby jack cheese
1 can enchilada sauce
Mix all ingredients in a bowl, reserving 1/2 the enchilada sauce. Shape mixture in a 13 x 9 ungreased pan. Pour remaining enchilada sauce over meat loaf. Bake at 350 for about 45 minutes or until meatloaf is cooked through.
